Secret Ingredient Banana Bread Monday, Feb 2 2009 

Lately I have been on a baking fix. So I’m going to share my latest creation: Banana Bread. I came about when I saw the recipe I had bananas but the original recipe called for applesauce. I didn’t have applesauce so I replaced it with sweet potato puree. It turned out great if you use large very ripe bananas.  It’s healthier because the added benefits of sweet potatoes without the added sugar from the applesauce. Adapted from Ladies’ Home Journal, October 2008.

  • Oil Spray or Butter, for pan
  • 2  cup all-purpose flour, plus more for pan
  • 1  tsp baking soda
  • 1/2  tsp baking powder
  • 1/2  tsp salt
  • 3/4  cup sugar
  • 1/2  cup sweet potato puree
  • 2  tbsp butter, melted
  • 1  tsp pure vanilla extract
  • 2  large eggs, beaten
  • 1-1/2  cups mashed ripe bananas (about 3)

Directions

1. Heat oven to 350 degrees F. Grease and flour a 9-by-5-inch loaf pan; set aside.

2. In a medium bowl, whisk together flour, baking soda, baking powder and salt. In another bowl whisk together sugar, puree, butter and vanilla extract. Whisk in eggs until combined. Using a large spoon, stir in banana. Gradually stir in flour mixture until just combined. Evenly pour batter into prepared pan.

3. Bake until a toothpick inserted in center comes out almost clean, 50 min to 1 hr. Transfer bread in pan to a wire rack and let cool 5 min. Run a knife around edges of bread to loosen from pan. Invert onto rack and turn bread topside up. Let stand until cooled completely. Makes 12 servings.

Sweets and Shoes Sunday, Oct 19 2008 

I really should try to post at least one post a week. Without the Internet at home and not being at home all the time, it’s hard to post anymore than that.

Recently, a coworker “passed away.” I really don’t know what happened to her; I haven’t all the details. I only meet her twice since Working at the National Harbor Store. She seems like a nice enough girl. I’m sure she thought  of me as some newbie from some god forsaken store.  in other words I don’t know much about her. I think she like to play basketball and her’s cool with her mom. she seems pretty confident in her job even though she never officially trained her (at least that’s what I overheard). “Sweets to the Sweet,” Serina. You will be missed. Sorry about that. I finally got the info straight. Serina’s father passed away. My sincerest apologies and condolences.

Now something happen to day that never ever happened before in my life. I want a pair of shoes that are almost $300! Usually, I never pay more that $100 out of principle. I know to many people who do and I have heard of many people who got hurt because of their shoes. But these are actually pretty cool. MBT makes them. The round sole is suppose to help you burn calories and improve pressure on you joints. And I REALLY want them. Just how much? I want a Wii but they cost about the same price . . .

. . . Especially if you don’t have a computer or the Internet at home. I’ve been looking at laptops on EBay but with the economy the way it is and my father not really being god at money (much like myself), it will be probably after Thanksgiving before I get one.

In other news, I got a date on Friday! I’m going with this guy I meet at Union Station about 3 years ago but we lost contact. I guess he was OK but he tells me that he misses me and didn’t regret being with me. He seems nice enough so I agreed to go on a date with him. It be good for me to go anyway.

I didn’t get a chance to go to Yaoicon this year, mostly due to procrastination on my part. My friend did go with a bunch of her friend and managed to put some videos on You-Tube here and here.

On the election front, I was previously in awe of McCain VP pick, Sarah Palin. Now I would like to take back what I had said. I realize that this may be old news but it is obvious that P was pick to win over the conservative base and some Hillary democrats that are not supporting Obama. Despite her record in handling corruption in Alaska, she’s no Hillary clone. I thought it was a smart choose for McCain because it kind of stole the Democratic convention’s thunder. But now, she seems so out of place in this very close race to the White House. Well, we’ll see after the second presidential debate tonight.

With the ice cream business slowing down, maybe I can get some business done this week . . .

My phone is not crappy anymore! Tuesday, Aug 19 2008 

I used to have a phone that was very very crappy! It was broken in half and the antenna came apart. I had lot of pictures on it and I had lots of good times with it but now it just couldn’t get a signal anymore. Now I have a new Nokia phone and I am very very happy, I just bought a new cell phone charm(?) for it, and I’m happy happy happy happy happy.
